Products
Nalo Greens, our premier salad mix, is prominently featured on many fine dining establishment menus throughout Oahu. The greens that make up this mix are described in greater detail below. Nalo Greens consists of Lolla Rossa, Redina, Green Oak Leaf, Red Oak Leaf, Red Romaine, and Little Green Romaine lettuces. These lettuces are added to the mix to mellow the stronger flavors of Roguette Arugula, Tat Soi, Red Mustard, Kyona Mizuna, Curly Cress, Bull's Blood Beet Leaves, Red Russina Kale, French Sorrel, and Chervil.
Microgreens are also grown year round at Nalo Farms. The following microgreens are harvested before reaching maturity for their unique flavor characteristics and are used by Hawaii chefs as garnishes as well as ingredients for their world-class cuisine: Tat Soi, Mizuna, Arugula, Red Mustard, Red Russina Kale, Burgundy Amaranth, and Red Cabbage.
Sprouts grow quickly under the watchful eye of the nurturing farm hands. In the Nalo Farms dark houses these fledgling corn and pea sprouts reach harvest age in as little as 7-10 days. The corn sprouts are known and widely used for their sweet flavor and beautiful yellow color. Whether used as a garnish or to add flavor to a local culinary masterpiece, these sprouts have become very popular in dishes all across the country.
Nalo Greens Mix
Lolla Rossa - intense deep red/magenta frilly lettuce. A little on the bitter side but it's vibrant color makes it stand out in the mix.
Redina - broader leaf with an intense deep red color. Mild tasting and slightly bitter.
Green Oak Leaf - light green oak-shaped leaves. Mild sweet flavored lettuce. Adds dimension to the salad mix.
Red Oak Leaf - slightly tinged red/bronze oak-shaped leaves. Mild tasting.
Red Romaine - succulent amber/plum leaves with a sweet romaine flavor.
Little Green Romaine - deep green color with a sweet romaine flavor.
Roquette Arugula - a favorite among greens lovers! Very pungent greens with a nutty peppery flavor.
Tat Soi (Tah Tsai) - deep dark green, soupspoon shaped leaves. These sweet cabbage flavored greens offer high vitamin and calcium content in addition to its delicious flavor.
Red Mustard - stunnig purplish green leaf cabbage. Very pungent spicy flavor similar to wasabi.
Kiyona Mizuna - a delicately wild flavored green. Highly serrated apple green leaves.
Curly Cress - and absolute favorite! Miniature parsley like foliage. Very deceptive flavor as it starts out sweet, and then comes a clean peppery zing!
Bull's Blood Beet Leaves - this beautiful reddish green beet leaf shaped green, is known for its sweet spinach like flavor. During the winter, it turns an intense shiny burgundy color.
Red Russina Kale - bluish green leaf with pink veins and serrated edges with a sweet milky flavor.
French Sorrel - this is an herb. Very distinct flavor of biting into a lemon.
Chervil - feathery looking green leaves with strong flavor of anise.
